POTATO STEW WITH ROASTED PEPPERS – THE TASTE OF HOMEMADE COMFORT FOOD

Necessary products:

  • 5–6 potatoes 
  • 3–4 roasted red peppers 
  • 1 onion 
  • 1 carrot 
  • 2–3 tbsp oil 
  • 1 tsp paprika 
  • 2–3 tomatoes or 300 g tomato sauce 
  • 1 tsp flour (optional, for thickening) 
  • Fresh parsley 
  • Salt and black pepper to taste 

Method of preparation:

  1. Sauté the chopped onion and carrot in oil until softened. 
  2. Add the paprika and stir briefly to release the aroma. 
  3. Add the chopped potatoes and mix well. 
  4. Add the tomatoes or tomato sauce and enough water to cover the ingredients. 
  5. Simmer until the potatoes become tender. 
  6. Add the roasted peppers and cook for a few more minutes. 
  7. Season with salt and pepper and finish with fresh parsley.
