Necessary products:
- 300 g dried beans
- 1 red onion
- 1–2 roasted red peppers
- 2–3 pickles (optional)
- Fresh parsley
- 3–4 tbsp oil
- 1–2 tbsp vinegar
- Salt to taste
- Black pepper to taste
- A pinch of paprika (optional)
Method of preparation:
- Wash the beans and soak them for several hours or overnight.
- Cook the beans in fresh water until tender, keeping the beans whole.
- Drain the cooked beans and allow them to cool.
- Finely chop the onion, roasted peppers, and pickles.
- Combine the beans with the vegetables and add fresh parsley.
- Season with oil, vinegar, salt, and black pepper.
- Let the salad rest for a while before serving so the flavors can blend.
